Mmmmm cookies...

Ah, Sunday. Both a blessing and a curse - still the glorious weekend, but so close to going back to work :(
So, in order to have some snacks that aren't full of chemicals (as much as possible without spending a fortune on organic foods) I made some baking, adapted from my Edmonds cook book

Chocolate chip cookies
125g butter, softened
1/4 C sugar (I prefer raw)
3 T sweetened condensed milk (Try it with caramel condensed milk! Yum!!!)
1 t vanilla extract
1 1/2 C flour (mix plain and wholemeal to make it slightly "healthier")
1 1/2 t baking powder
1 t ground cinnamon powder
3/4 C chocolate chips

Cream butter, sugar, condensed milk and vanilla.
Sift in flour and powders, stir lightly.
Pour in chocolate chips, bring together.
Tablespoons make 1" wide cookies, Ice cream scoops make good sized (2") cookies ;)
Bake at 170'C for 15minutes or so, or until they move when touched lightly.
Makes about 16 2" cookies.

Honey Oat Cookies
125g butter, softened
1/2 C raw/brown sugar (I like the mix of the two)
2 T honey (good runny honey, although honeycomb softened and whizzed works well)
1 C flour (1/2 plain, 1/2 wholemeal)
1 t baking powder
1 t ground cinnamon powder
1 1/2 C rolled oats (and not that "Quick oats" stuff!)

Cream butter, sugar, honey together til smooth.
Sift in powders.
Add rolled oats, stir well together
Roll tablespoons of mixture, flatten with a fork on tray.
*Keep your hands clean, or the mixture will stick to the bits and not make nice balls
Bake @ 180' C for 15minutes.
Makes about 20 or so.

Mmmmm yum. Makes the work week almost bearable ;)
